Vinification of fresh grapes, followed by a ten days maceration on the skins. Racking, then the wine remains until February in inox and cement tanks. In February of the following year, the wine Re-ferments (“Ripasso technique”) on the fresh pomace left over from the just-completed Recioto and Amarone fermentation. The wine is refined in big oak barrels for one year, then refined in bottle for four months. Spicy bouquet with intense aromas of ripe cherry and jam. Full, soft flavours in the mouth, with a very pleasant, slightly off -dry finish.

Traditional natural drying of the grapes starts at the end of September for about 100 days with a natural loss of 35-40% of the weight. 60% of the wine is refined for 24 months in big oak barrels, and 40% of the wine is refined for 18 months in new French barriques from Allier oak, then six months in the bottles. Powerful bouquet and intense aromas of cherry, ripe plum, toasted almond and vanilla.

Wallflower Gin by Odd Society starts with 100% BC malted barley spirit. Twelve local and exotic botanicals are added to create a gin with a unique character that is rich and aromatic, yet light and refreshing. Heartier botanicals, such as European juniper and BC cranberries, are steeped for 12 hours prior to distillation, while more delicate botanicals, like rose, lavender and elderflower, are placed in a gin basket above the still allowing the rising alcohol vapours to extract their flavourful oils. This Cider is a very raspberry-forward offering. Although some apples are present, it’s simply a canvas for smooth, juicy and fresh raspberries to showcase their taste. Blueberry remains and lingers, becoming sweeter. Apple flavours are more detectable here. Notes of honey come through. Semi-dry finish. Stays on the palate for a while. Blueberry is a unique fruit-flavoured cider, genuinely capturing the flavours and essence of the wild fruit it comes from. Crisp and clean, it still has some sophisticated dry elements from the fermentation process touted on the bottle. This one does not taste too alcoholic, so be careful, as it is effortless to drink.
