Vinification of fresh grapes, followed by a ten days maceration on the skins. Racking, then the wine remains until February in inox and cement tanks. In February of the following year, the wine Re-ferments (“Ripasso technique”) on the fresh pomace left over from the just-completed Recioto and Amarone fermentation. The wine is refined in big oak barrels for one year, then refined in bottle for four months. Spicy bouquet with intense aromas of ripe cherry and jam. Full, soft flavours in the mouth, with a very pleasant, slightly off -dry finish.

Traditional natural drying of the grapes starts at the end of September for about 100 days with a natural loss of 35-40% of the weight. 60% of the wine is refined for 24 months in big oak barrels, and 40% of the wine is refined for 18 months in new French barriques from Allier oak, then six months in the bottles. Wallflower Gin by Odd Society starts with 100% BC malted barley spirit. Twelve local and exotic botanicals are added to create a gin with a unique character that is rich and aromatic, yet light and refreshing. Odd Society Bittersweet Vermouth starts with a base of local Viognier wine that is fortified with a 100% barley spirit fermented and distilled on-site. Blueberry is a unique fruit-flavoured cider, genuinely capturing the flavours and essence of the wild fruit it comes from. Crisp and clean, it still has some sophisticated dry elements from the fermentation process touted on the bottle. This one does not taste too alcoholic, so be careful, as it is effortless to drink.
